No Bake Cheesecake

My daughter took a baking class as an elective in middle school this year and came home with this yummy cheesecake recipe. Ironically, it's a no-bake cheesecake!  It is super easy  and my son loves it when his sis makes it. Since it can get a bit crumbly when cutting, it may be best saved for a family dessert.


No Bake Cheesecake

crust
1 package graham crackers
1/3 cup sugar
1/2 teaspoon cinnamon
6 tablespoons butter, melted

filling
1 8 ounce container cream cheese, at room temp
a heaping 1/2 cup sour cream
3/4 cup powdered sugar
juice of 1/2 lemon
1 teaspoon vanilla extract

To make crust: crush graham cracker in ziplock bag by hitting them with rolling pin until well crushed. Put in  bowl with sugar and cinnamon and stir in melted butter until the crust is moist and binds together. Spray 8 inch pie plate with non stick cooking spray. Press the crust mixture into the pan and up the sides. Place the empty crust in the refrigerator for 10 minutes to firm.
While crust is in fridge, place cream cheese in mixing bowl and beat until it is soft and fluffy. Add sour cream and stir until combined. Add the powdered sugar slowing, stirring until it is incorporated. Add the lemon juice and vanilla, stirring util smooth. Place filling in chilled crust. Refrigerate for at least an hour before serving. Tastes great with sliced strawberries. Enjoy!
