Bieler's Broth

This easy to digest soup is packed with green vegetables that provide nutrients and minerals that relieve stress on the liver and helps heal inflammation. Bieler’s broth was invented by a doctor named Henry Beiler as a detox soup to help promote healing and cleansing in the body. All that goodness makes it appealing to make and drinking a hot cup before breakfast or before dinner is an easy way to enjoy its benefits.



Bieler's Broth
1 pound green beans
3 medium zucchini, cut into half moons
2 stalks celery, chopped
1 bunch parsley, stems removed
4 cups water (or chicken broth or vegetable broth)
1-2 cloves garlic (optional)
salt & pepper to taste (optional)

Place all ingredients in a pot and bring to a boil. Lower heat and simmer covered until all the vegetables are tender, about 25 minutes. Puree soup in the pot with immersion blender or in blender in batches. Sometimes I like to sprinkle pumpkin seeds or nutritional yeast. Enjoy warm!
