Bieler's Broth
1 pound green beans
3 medium zucchini, cut into half moons
2 stalks celery, chopped
1 bunch parsley, stems removed
4 cups water (or chicken broth or vegetable broth)
1-2 cloves garlic (optional)
salt & pepper to taste (optional)
Place all ingredients in a pot and bring to a boil. Lower heat and simmer covered until all the vegetables are tender, about 25 minutes. Puree soup in the pot with immersion blender or in blender in batches. Sometimes I like to sprinkle pumpkin seeds or nutritional yeast. Enjoy warm!
