How do you feel about eggplant?

I love eggplant but my family does not feel the same, so when I have a hankering, I just slice an eggplant and put it on a baking sheet that I have sprayed with olive oil spray. Then I spray the top of the eggplant with a little spritz of olive oil spray as well. Sprinkle on a little kosher salt, pepper and oregano, bake at 400 degrees for 12 minutes, flip over for another 3 minutes and oven roasted eggplant is ready to enjoy!
