Dutch Baby Pancakes

I had dutch babies in the oven yesterday morning when my husband called to tell me he was bringing our good friend and his daughter over~ it was so fun to be able to share these delicious baked "pancakes" with  with them on the deck.
I always make two batches in glass pie plates- they go quickly in our house!

We love to squeeze fresh lemon juice and sprinkle powdered sugar on top. They also taste great with strawberries or peaches!


Dutch Babies

Pan size                 Butter                Eggs                  Milk and flour
2-3 qts                  1/4 cup               3                       3/4 cup each
3-4 qts                  1/3 cup               4                       1 cup each
4-41/2 qts             1/2 cup               5                       1 1/4 cups each
41/2-5 qts             1/2 cup               6                       1 1/12 cups each

Select the recipe proportions to fit your pan (I use 3 eggs, 3/4 cup flour and milk for my 9 inch glass pie pan). Put butter in pan and let melt in 400° oven while you mix batter. Put eggs and milk in bowl and whisk  together. Add flour and whisk until batter is smooth. Remove pan from oven and pour batter into the hot melted butter. Return to oven and bake until puffy and brown, around 20-25 minutes. Serve with powdered sugar, freshly squeezed lemons and fruit.
