This weekend was full of softball and volleyball at tournaments for our girls. Tomorrow we are celebrating the last games/season end of volleyball and are bringing cupcakes for our year end team celebration. I think using boxed cake mixes for cupcakes is just fine, but really don't like using canned frosting, so I found an easy frosting to whip up instead. I made
this recipe and used a star tip from my daughters'
Kuhn Rikon Cupcake Decorating Set to frost the cupcakes. It was fun to use and look how pretty they look!
Quick and Easy Chocolate Frosting
1 cup softened unsalted butter
1/2 cup unsweetened cocoa
1 teaspoon vanilla
5 cups sifted confectioners sugar
3-4 tablespoons milk
Beat butter and cocoa until smooth in large bowl. Mix in vanilla and powdered sugar 2 cups at a time. Slowly add milk and whip until light and smooth, about 1-2 minutes. Frosts one 8 or 9 inch layered cake for 24 cupcakes (with some left over!).
