4th of July Dessert

 Our family spent a fabulous July 4th together at our cabin in Lake Tahoe. We spent a wonderful day on the boat and the kids had a blast tubing and jumping off the dock in Emerald Bay.  We had a BBQ for dinner and I wanted to make a fun red white and blue dessert. My sister-in-law and I made this together after dinner and everyone loved it!

Patriotic Fruit Pizza

1 tube ready-made sugar cookie dough
8 ounces cream cheese
3/4 cup confectioner's sugar (add a 1/4 cup more if you like it a little sweeter)
1 teaspoon vanilla
sliced strawberries
blueberries

Spread entire tube of cookie dough out in circle on cookie sheet lined with parchment paper. Bake at 350° for 11-15 minutes or until light golden brown. Let cool.
Whip cream cheese, confectioner's sugar and vanilla until smooth. Spread over cookie and add fruit on top. Slice into pieces and enjoy!
