Potato Leek Soup with Dill

Another tasty, easy to make soup that is a crowd pleaser! Leave out the dill for a lovely potato soup if you don't have dill lovers in your house.

Potato Leek Soup with Dill

2 tablespoons butter
3 leeks, chopped and washed thoroughly
4 russet potatoes, peeled and cubed
4 cups chicken broth
1 cup milk
1 teaspoon dill
salt and pepper

Melt butter in stock pot and saute leeks for 3 minutes. Add chopped potatoes, chicken broth and dill and bring to boil. Simmer for 15 minutes until potatoes are tender. Add milk and blend half of soup with immersion blender. Add salt and pepper to taste. Enjoy!
