This dish is amazing- takes about 45 minutes to make in just one pot and is flavorful, filling and delicious. Serve it with a crusty whole grain bread or sourdough, and you have a great meal. Next time I am doubling this recipe...we all loved it and wish we had leftovers for the next day!

Italian Sausage,White Bean and Spinach Stew
2 tablespoons olive oil
4 mild Italian sausage links
1/4 onion, chopped
4 garlic cloves
1 sprig thyme
2 15 ounce cans great northern beans
2+ cups chicken broth
5 ounces (or more) baby spinach
salt and pepper
shredded parmesan cheese to sprinkle on soup
Heat 1 tablespoon oil in large skillet over medium heat. Remove sausage from casings and put into pan, cutting it into bite size pieces with a wooden spoon as it browns in pan. Drain sausages on paper towel.
Add 1 tablespoon of oil into same skilled and cook onion and garlic over medium heat. Add thyme sprig. Cook, stirring occasionally, until onion is softened, 5-8 minutes. Add beans and broth and cook, crushing a few beans with the back of a spoon to thicken sauce, until slightly thickened, 8-10 minutes. Season with salt and pepper. Add spinach by handfuls and cook until wilted, about 2 minutes. Mix sausage back in and add more broth if you would like it more like soup. We preferred it thick like stew. Enjoy!
