This is another winner bar cookie recipe- I love bars because they are a delicious way to make classic cookies with no fuss. We brought these to a very fun end-of-season softball celebration today and they were a hit. Each bar is moist and chewy and has a sweet crispy cinnamon sugar crust on top. Try them- your kids (and you!) will love them!
Snickerdoodle Bars
1 cup unsalted butter, room temperature
2 cups packed brown sugar
2 eggs, room temperature
1 tablespoon vanilla
2 2/3 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons cinnamon
Preheat oven to 350°. Lightly butter 9" x 13" metal baking pan.
In large bowl, beat together butter and sugar until fluffy, about 2-3 minutes. Add eggs and vanilla and beat until smooth. Sift together flour, baking powder and salt. Stir flour mixture into butter mixture until well blended. Spread evenly in pan (the batter is almost like cookie dough). Combine white sugar and cinnamon and evenly sprinkle over top of batter.
Bake 25-30 minutes or until surface springs back when gently pressed. Cool and cut into bars with plastic knife (helps make clean edges). Enjoy!
