A good friend of mine is from the south and has told me about her tradition of serving black eyed peas for good luck in the new year. I have always wanted to try "cowboy caviar" and since you can find black-eyed peas fresh in the grocery store right now, I thought it would be a fine time to make a batch of this dip. Although it may seem more appropriate for summer, it tastes awesome now---my husband and I almost ate it all for dinner one night! And even though it's not quite the new year, maybe it will bring us good luck!
COWBOY CAVIAR
1/4 cup red
wine vinegar
3 tablespoons olive oil
1 teaspoon cumin
3/4 teaspoon kosher salt
1/8 teaspoon pepper
2 cloves garlic, minced

1 can shoepeg
corn, drained
1 can blackeyed peas, drained and rinsed (or fresh if you are inspired :)
1 large tomato, diced
1/4 cup chopped cilantro or parsley
2 green onions, chopped
2 avocados, diced
Whisk together vinegar, olive oil, cumin, salt, pepper and minced garlic to make dressing.

Combine rest of ingredients except avocado and toss with
dressing. Add cubed avocado
prior to serving. Serve with tortilla chips.
