Chicken with Lemon and Capers

Back to healthy cooking after eating tasty Chocolate Crinkle cookies! This is an easy and flavorful way to prepare chicken breasts in a flash.


Chicken with Lemon and Caper Sauce

2 chicken breasts, split length wise
1 tablespoon olive oil
1/3 cup extra-dry vermouth
juice of one lemon
1 1/2 tablespoons capers (or more if you love capers!)
salt and pepper to taste

Sprinkle chicken breasts with salt and pepper. Heat oil on large nonstick skillet over medium heat. Add chicken, cook 6 minutes on each side or until chicken is done. Remove from skillet and keep warm.
Add vermouth, lemon juice and capers to skillet. Cook until reduced to 1/4 cup. Spoons sauce over chicken. Enjoy!
