Egg Cups with Spinach and Turkey Sausage

Last night I cooked some lean turkey breast sausage patties to have with our "breakfast for dinner" and they were not a big hit with the kids. What to do with all those leftover sausage patties? They were the perfect addition to egg cups ---I haven't made egg cups for a long time, so I am now happy to have these little protein packed savory mini quiches ready for breakfast for the week!
☺ Although now I have to clean muffin tins, a cleaning job that can be avoided with this yummy recipe!

Egg Cups with Spinach and Turkey Sausage

6 whole eggs
6 egg whites
1/2 cup milk
5 small turkey sausage patties, cooked, cooled and chopped small (I used Jennie-O lean                      turkey sausage)
2 + cups chopped fresh spinach
1/2 cup finely grated cheddar cheese
salt and pepper to taste

Whisk together eggs, egg whites and milk. Add rest of ingredients and ladle into 12 well greased muffin tins (spray with cooking spray).  Bake at 350° for 25 minutes. Enjoy!
