Beets with Balsamic Glaze, Goat Cheese & Toasted Walnuts

Beets could be a great Valentine's treat for your honey- they are an awesome deep red color and full of vitamins, just perfect for your sweetheart.  This could be an easy side dish to a tasty steak and arugula salad that could round out a lovely Valentine's Dinner Menu...just thinkin' ahead...

If you can find already cooked beets, all the better! 
These organic beets came from Costco.                                            




Beets with Balsamic Glaze, Goat Cheese and Toasted Walnuts

8 small roasted beets (you can roast your own at 400° for 45 minutes or cheat and use ready- cooked beets like me:)
1/3 cup balsamic vinegar
1 tablespoon real maple syrup
1/4 cup goat cheese, crumbled
2 tablespoons toasted walnuts
kosher salt

Balsamic Glaze:
Put balsamic vinegar and maple syrup in small saucepan and cook over medium heat until glaze sticks to back of metal spoon. The sauce should reduce by about half- keep an eye on it because it burns easily.

Cut warmed beets into quarters and then into chunks. Drizzle balsamic glaze on beets and mix in. Crumble goat cheese and walnuts on top. Enjoy!
