Honey Mustard Baked Chicken

My kids love honey mustard pretzels, so I hoped they would like this recipe that I thought looked great and they did! It is quick and easy to prepare, requires no marinating and yet the chicken is very flavorful. I found this dish on Simply Recipes which recommends thighs with skin, but I used skinless thighs and two breasts cut in half (cooked for a little less time), and they were still moist and delicious!

Baked Honey Mustard Chicken - Yum!

Honey Mustard Baked Chicken
                     
5 chicken thighs + 2 chicken breasts, cut in half (or whatever chicken parts you have)
1/4 cup dijon mustard
1/4 cup honey
1 tablespoon olive oil
fresh rosemary (optional)
kosher salt and pepper

Mix mustard, honey and oil in small bowl. Place chicken pieces in baking dish and sprinkle with salt and pepper. Drizzle mustard-honey mixture all over chicken, put rosemary between pieces and bake in 350° oven for 30 minutes. Serve over rice with pan juices and a vegetable= tasty dinner! Enjoy!
