I discovered this yummy recipe for oven "fried" chicken on Pinterest and highly recommend it- huge hit with the fam! It does require a little pre-planning because the chicken is marinated in buttermilk and who has buttermilk on hand in their fridge? I suppose you could add a bit of lemon juice to milk and just fake it, as another option. Anyway... I thought it would be spicy due to all the ingredients, but it just turned out to be deliciously flavorful and was perfect with steamed green beans and mashed potatoes.
