Lime Sugar Cookies

One of my daughters was invited to celebrate her friend's birthday at the beach last weekend, so I wanted to send along some treats for the birthday girl, her friends and family to enjoy. Sugar cookies are always a hit and when I saw this recipe with a lime twist, it seemed like the perfect cookie to send along.  
My husband and I also brought a few of these tasty cookies with us when we met friends for a picnic at a local concert in the park and everyone really enjoyed them~




Lime Sugar Cookies
1 cup butter, softened
1¾ cup granulated sugar
1 egg
1 tsp vanilla
2 tsp lime juice
2 tsp lime zest
1 tsp baking soda
½ tsp baking powder
½ tsp salt
3 cups flour

Optional frosting drizzle:
juice of 1 lime
1/2 cup powdered sugar
Preheat oven to 350 degrees 
Whisk together baking soda, baking powder, salt and flour in a medium bowl. In a large bowl cream together the butter and sugar until light and fluffy Add egg, vanilla, lime juice and lime zest.
Add the flour mixture, a cup at a time, and stop once combined.
Roll 2 tbsp into a ball and place onto the baking sheet, keeping them 2 inches apart.
Bake for 13-15 minutes or until just barely browned on the bottom.

If desired, drizzle mixture of lime juice and powdered sugar on top of cookies
