My kids love Taco Tuesday and so do I because it's easy and part of our regular meal routine, so I don't have to come up with creative ideas of what to make for dinner. Most often, we use ground turkey meat and all the regular fixin's, but my daughter requested fish tacos last week for a change. I was happy to try something new!
These tacos were not only delicious and healthy, but a pefect mix-up to our traditional tacos and a big hit with the whole family. We enjoyed some of our fish tacos topped with corn, red pepper and zucchini relish and some with avocado crema, red cabbage and crumbled cotija cheese. Our kids loved just the fish with shredded mexican cheese and sour cream. So many options!
4 skinless tilapia fillets
1 tbls ground cumin
1 tbls chili powder
1 tsp garlic powder
1/2 tsp kosher salt
1 Tbsp freshly squeezed lime juice
2 tsp canola oil
Here are some ideas of sides to go with your tacos:
- Crumbled cotija cheese and plain grated red cabbage
- Red Cabbage Slaw (Combine 2 T apple cider vinegar, 1 tsp sugar, sprinkle of salt and toss with 1/4 head shredded red cabbage)
- Avocado Crema (Blend 1 diced avocado, juice of 1 lime and 1/4 cup lowfat Greek yogurt in small food processor or blender, add salt to taste)
- Corn, Red Pepper and Zuccini Relish (saute 1/2 red pepper and 1 zucchini that have been chopped in small dice in 1 tsp butter and 1 tsp olive oil for 2 minutes. Add 1 clove minced garlic, saute for 1 minute. Add kernels from 2 cobs of fresh corn and sprinkle with 1/2 tsp cumin and salt to taste and saute for 2 more minutes.)
- Sour Cream (my son's favorite)
- Chopped white onion and a squeeze of lime
