This is one of my favorite summertime whip-together lunches--- cottage cheese, homemade pesto and cherry tomatoes. Yum!
Basil Walnut Pesto
2 cups packed basil leaves
1/3 olive oil
1/2 cup freshly grated Parmesan cheese
1/2 cup chopped toasted walnuts
2 minced garlic cloves
1/2 teaspoon kosher salt
sprinkle of pepper
Combine all ingredients in food processor or blender and combine until smooth.
