Ingredients
1/2 yellow onion, cut into chunks
2 garlic cloves, minced
4 cups chicken broth
salt and pepper
2 tablespoons light sour cream
Put all ingredients except sour cream in soup pot and bring to a boil. Lower heat to a simmer for 20-30 minutes until the vegetables are soft. Add salt and pepper to taste. Blend with an immersion blender and stir in the sour cream. Enjoy!
