Fresh bran muffins anytime

My mother-in-law shared this recipe with me many years ago...my father-in-law loves her fresh-baked muffins warm out of the oven with fresh fruit and a glass of milk for breakfast!
You need to use a BIG bowl when you make this batter!

Fill the muffins almost to the top before baking

A tasty muffin fresh out of the oven
Hot Bran Muffins, Anytime!

2 cups All Bran cereal
2 cups boiling water
2 1/2 cups sugar
1 cup butter
4 eggs
1 quart buttermilk
5 cups flour
5 teaspoons baking soda
1 1/2 teaspoons salt
4 cups Bran Buds cereal

Mix and let stand: 2 cups All Bran cereal and 2 cups boiling water

Cream in very large bowl: 2 1/2 cups sugar and 1 cup butter

Add: 4 eggs and 1 quart buttermilk

Stir in just until moistened: 5 cups four, 5 tsp baking soda, 1 1/2 tsp salt, 4 c Bran Buds cereal

Stir in All Bran mixture, cover and store in refrigerator for up to 6 weeks (do not stir). Take out just as much as you want to bake, and you have fresh muffins when you want them!  Add blueberries, raisins, raspberries, chocolate chips, walnuts... tailor them to your taste.

Bake at 375° for 15-18 minutes.
