Great Lunch Salad |
Mache Salad
1 bag mache lettuce
1/2 head butter lettuce
3 ounces goat cheese
1/4 cup toasted walnuts
1 avocado, cut into cubes
Dressing
3 tablespoons white balsamic vinegar
4 tablespoons extra virgin olive oil
1/2 shallot, diced fine
1/4 teaspoon salt
Dice shallot and let sit in vinegar for 10 minutes before adding olive oil. This gently "cooks" the shallot a little bit and mellows the flavor. Slowly mix in olive oil and salt.
