Mini Turkey Florentine Meatloaves

If you have been reading my blog, you know I love spinach and now you will know I love meatloaf---very odd, but true. So I like to make mini meatloaves that I can have for lunch or even a quick breakfast throughout the week. They are a healthy source of protein and greens and are an easy grab and go meal.  If you like spinach and meatloaf, read on...and if not, skip this post!


Mini Turkey Florentine Meatloaves

1 1/4 pounds ground turkey meat
9 ounce bag fresh spinach
1 tablespoon olive oil
1/2 onion, grated
2 cloves garlic, minced
1 egg
1/2 cup Parmesan cheese
1/4 cup bread crumbs
1 teaspoon salt
1/4 teaspoon pepper

Saute onion in large pan with olive oil. When soft, add garlic and 1 minute later, add spinach and stir until wilted. Drain and chop when cooled. In large bowl, mix ground turkey, egg, Parmesan, bread crumbs,salt and pepper. Stir in cooled spinach to meat mixture and put into 8 muffin tins sprayed with non-stick spray. Bake at 425° for 22 minutes.
