Healthy Turkey Meatball Soup

This soup is a great kick-start to a healthy new year...full of lean protein and veggies. Great to make on Sunday to have in your fridge for a quick, fulfilling lunch during the week.



Healthy Turkey Meatball Soup

2 tablespoons olive oil
2 leeks, chopped
2 cloves garlic
2 carrots, chopped
2 ribs celery, chopped
8 cups chicken broth

Meatballs:
1 pound lean ground turkey
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon basil
1 teaspoon oregano
1/4 cup parmesan cheese
1/4 cup bread crumbs
1 egg

1 pound fresh spinach, chopped
salt and pepper to taste
grated parmesan for topping

Saute leeks in dutch oven until soft, about 5 minutes. I add a little salt to the leeks while they are cooking. Add garlic and saute for another minute. Add carrots and celery and saute for three more minutes. Add chicken broth and bring to a boil. 

While the broth and veggies come to a boil, make meatball mixture. Combine all the ingredients for meatballs, mixing together with your hands.

Once broth has come to a boil, lower heat to medium and form meatballs and drop them into the broth as you make them. You can make them little or big- they cook in the broth. After you have added all the meatballs, cover pot and simmer for 10 minutes. Add chopped spinach and stir until wilted. Add salt and pepper to taste. Serve with grated parmesan. Enjoy!
