Thanks to my dear friend Abbie who introduced me to this quick and easy recipe for chicken satay from a Traders Joe's cookbook-my family loved them and if you like curry, you will love these, too!
Chicken Satay
2 large chicken breasts, cut into strips
1/2 cup light coconut milk
3 tablespoons peanut butter
1 teaspoon curry powder
2 garlic cloves
3 tablespoons soy sauce
wooden skewers, soaked in water
Combine all the ingredients in a large glass bowl. Add chicken and toss to coat. Cover and refrigerate at least 30 minutes or up to overnight. When ready to cook, thread chicken strips on soaked skewers. Grill for 2-3 minutes per side and serve with peanut sauce.
Thai Peanut Sauce
1/3 cup light coconut milk
2 tablespoons peanut butter
2 teaspoons brown sugar
1 teaspoon soy sauce
1 tablespoon lime juice
Combine all ingredients in small saucepan over medium low heat. Simmer for 5 minutes, stirring frequently. Remove from heat and let cool before serving. Sauce thickens a bit as it cools.
