French Green Bean Salad

Today was another scorcher (91 degrees!), so we had an international  salad feast for dinner this evening on the deck- Asian chicken salad and this French green bean salad, along with juicy watermelon. The capers and tasty french mustard put this over the top- so yummy!


French Green Bean Salad

1 1/2 pounds green beans (or haricot vert if you really want to make it authentic)
2 - 3 teaspoons French mustard (I love Maille Dijon which you can find in most grocery stores)
2 tablespoons white wine vinegar
4 tablespoons olive oil
kosher salt and fresh ground pepper
1 shallot, finely chopped
small garlic clove, minced
2 tablespoons capers

Bring large pot of water to a boil, add salt and green beans. Boil 4-5 minutes(I like my green beans cooked and not too crunchy and raw) and drain in colander. Meanwhile, put shallots and vinegar in jar for a few minutes (the vinegar "cooks" the shallots, mellowing them a bit), then add mustard, garlic, salt and pepper. Add oil and shake to mix until emulsified and then add capers. Toss warm beans with dressing- they absorb the flavors so much better this way. Serve warm or at room temperature. Enjoy!
