Asparagus Tart

A friend of mine introduced me to a wonderful artsy and creative food blog called The Forest Feast. You can imagine how excited we were to attend a book signing together at our local bookstore where Erin, the blog creator, was discussing her beautiful new cookbook. The Forest Feast Cookbook has simple vegetarian recipes full of her lovely watercolor paintings and personal lettering touches alongside amazing photos. 
I have made her asparagus tart twice already for an appetizer and each time it's been a hit!


Asparagus Tart
from the Forest Feast

1 sheet puff pastry
soft cheese (like brie, goat cheese, fresh ricotta)
1 egg
15+  raw asparagus spears
2 tablespoons pine nuts
2 tablespoons capers
1/2 teaspoon garlic powder
1/2 teaspoon Italian herbs
salt and pepper

Lay out sheet of defrosted puff pastry on greased baking sheet. Pinch up edges to make a crust. Spread thin layer of soft cheese over the surface. Beat the egg and pour evenly over the cheese layer. Lay the asparagus stalks over the cheese layer. Sprinkle with pine nuts, capers, garlic powder, herbs, salt and pepper. 
Bake at 375° for 20 minutes until puffy and golden. Cut into squares and serve warm or room temperature. Enjoy!
