Roasted Zucchini

Winter seems like the best time to roast vegetables, just like summer is the best time to grill. So that's exactly what I've been doing lately with potatoes, beans, squash and beans. These roasted zucchini are on the quick, easy and tasty list! Definitely worth a try~

Roasted Zucchini

4 zucchini
garlic salt
1/4 cup grated Parmesan cheese
olive oil

Preheat oven to 400°. Line baking sheet with foil and spray with non-stick spray. Cut zucchini into quarters, length wise. Drizzle with olive oil, sprinkle with garlic salt and pepper, then top with Parmesan cheese. Roast for 10-12 minutes until golden on top. Enjoy!
