Ever have left over rotisserie chicken from Costco and wonder what to do with it? Try this tasty, healthy Quinoa Salad that includes your protein and veggies, all in one bowl.
Quinoa Pea, Mushroom and Chicken Salad
1 package sliced mushrooms
1 shallot minced
1 c quinoa
2 c chicken broth
1 bag English peas
Costco Chicken
Saute mushrooms and shallots in sauce pan and remove.
Rinse 1 cup quinoa and add to saute pan with 2 cups chicken broth
bring to a boil, then turn to low, cover and cook for 15 minutes.
Boil 1 bag English Peas (Trader Joe's has great ones!)
Cut up chicken into bite size pieces and flavor with Beau Monde Seasoning.
Toss all together and enjoy room temp!
