Easy Fried Rice

Whenever we have leftover rice, I make a batch of fried rice-my girls love it for lunch or dinner and if you just use a little butter to cook the eggs, it really is a moderately healthy meal. My husband doesn't care for oyster sauce, so I always take a serving out for him before I add the oyster sauce.

Easy Fried Rice

2 cups leftover rice
3 eggs
4 slices canadian bacon, cubed
1/4 cup peas
1 teaspoon soy sauce
1 tablespoon oyster sauce (or more to taste)

Melt 1 tablespoon butter in frying pan. Scramble eggs until set, add rice, canadian bacon, peas and stir until everything is warmed through.  Add soy and oyster sauce and garnish with green onions, if you like.
